Leah’s Super Moist Cornbread
This cornbread is so tasty and moist, it is like candy.
Prep time: 5 minutes
1 box of cornbread
½ stick melted butter
1 cup sour cream
1 small can of creamed style corn
*Preheat oven to 350 degrees.
*Mix all together
*Bake for 30 to 45 minutes depending on pan size.
This cornbread is delicious whether it is served hot or cold.
Betty's Black-eyed Pea Soup
A great winter warm up
Prep time: about 1 1/2 hours
Serves 6-8
1 bag of blacked-eyed peas
5-7 small sweet potatoes (or yams)
1 small onion
1 clove of garlic
ham chunks or ham substitute if you like
salt
pepper
sugar
cayenne pepper
1 pinch of cinnamon
1 pinch of thyme
2 vegetable bouillon cubes (I used vegetable base in jar)
chili powder
*Prep black eyed peas according to bean package (usually boil for 5 minutes, soak for an hour, then rinse)
*Saute onion, garlic, and ham in olive oil
*Season with salt, pepper, sugar, cinnamon, thyme to taste
*dilute bouillon cubes or vegetable base with 1/4 water & add to sauteed vegetables
*add cayenne to taste
*put prepared peas in crock pot with the appropriate amount of water (according to pea package) and salt, pepper, sugar to taste.
*add sauteed vegetable mix to crock pot
*prepare sweet potatoes (skin & cube, coat with olive oil then salt, pepper, sugar and chili powder)
*roast potatoes at 350 until tender (15 to 20 minutes)
*slow cook crockpot overnight or all day
*add onion, garlic and spices as needed
*1 hour prior to serving, add sweet potatoes
Lauren's Baked Ziti
Prep time: 25 minutes
Serves 4-6
1 package ziti pasta
24 ounces ricotta cheese
1 pound shredded mozzarella cheese
1 egg, beaten
1 jar spaghetti sauce
*Bring a large pot of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse
*Preheat oven to 375
*In a medium bowl mix ricotta cheese and egg
*Add ziti
*Lightly grease a baking dish and spoon in ziti mixture
*Pour spaghetti sauce in as you spoon in ziti mixture
*Top ziti mixture with mozzarella
*Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving
Simple Pancakes
Prep time: 10 minutes
Serves 4
1 cup all-purpose flour
2 tbsp sugar
2 tbsp baking powder
1 tbsp cinnamon
1 tsp salt
1 egg, beaten
1 cup milk
1 1/2 tbsp vanilla extract
2 tbsp vegetable oil
Frypan
*In a large bowl, mix flour, sugar, baking powder, cinnamon, and salt.
*Pour in milk, egg, vanilla, and oil. Mix until smooth.
*Heat frying pan over medium high heat with light oil.
*Pour the batter onto the griddle, using approximately 1/4 cup for each pancake.
*Brown on both sides and serve hot.

Scrump-dili-ump-ious Buffalo Chicken Nuggets
These nuggets are fresh, moist, and crunchy with a kick.
Prep time = 30 mins
Serves 3 to 4
1/2 cup flour
1/4 tsp cayenne pepper
1/8 tsp salt
1/4 milk
1/4 cup buttermilk (if I don't have this I just melt down a few tsps of butter)
1 egg, beaten
3 tsps hot sauce
2 cups fine cornflake crumbs
1/2 tsp cayenne pepper
1 1/2 lbs boneless skinless chicken breasts, cut into 1" cubes
cooking spray
baking sheet
3 small bowls
blue cheese dressing
*Combine four, cayenne, and salt in small bowl and set aside.
*Combine buttermilk, milk, egg, and hot sauce in another small bowl and set aside.
*Crush cornflakes (ziplocks do wonders) and combine with cayenne in the last bowl.
*Preheat oven to 400.
*Dip the chicken in the flour bowl, then the egg/milk bowl, and then the cornflakes bowl.
*Place the chicken on a baking sheet sprayed with cooking spray.
*Bake at 400 for fifteen minutes.
*Serve with blue cheese dressing.

Quick and Easy Asparagus
This dish can be served as a side or if can top pasta dishes.
Prep time: 5 minutes
Serves 4
1 bunch of thin asparagus
2 plum tomatoes
3 tablespoons of red onion chopped (optional)
1 tablespoon of oil
salt to taste
pepper to taste
medium fry pan
wash and cut asparagus into inch pieces
*wash and cube tomatoes
*heat oil on medium heat
*add asparagus and tomatoes (and onions)
*salt and pepper to taste
*simmer until asparagus is bright green
